vitamins

heat is uneven on vitamins too. reviews of extrusion in dry pet food report losses ranging from only a few percent for some b vitamins up to well over half for vitamin a, with vitamin e and several b-group vitamins also hit. it's exactly why extruded foods are routinely sprayed with a vitamin coating after cooking - to replace what the process removed.

partly - and that "partly" is the honest answer. some ingredients are robust and come through cooking largely intact. others - live cultures and omega oils especially - degrade with heat, oxygen and time. cold-pressing exists to protect the fragile ones, by never taking them up to the temperatures that break them.
